May is National Salad Month! Let this fact inspire you to add a side of salad to the dinner plate. Your body will thank you!
According to Jill Nussinow, MS, RD, “Greens are the number one food you can eat regularly to help improve your health,” and in light of this leafy month we have recommendations for healthy greens that are fun and easy to incorporate into a salad!
Kale is a cold loving crop that gives you everything you need from green food. The vegetable is a dynamo for calcium and a plentiful supplier of various vitamins including A, C, and K. The leaf’s dark veins range in color from cream to purple to black, depending on the weather and variety. Mix in some strawberries with the kale and dress it lightly (or heavily) with olive oil and vinaigrette for a truly unforgettable salad.
Spinach is packed with tons of vitamins and with 20 calories per serving will fill you up nicely. That’s why Popeye loves it so darn much! Spinach’s smooth texture is a wonderful compliment to Kale, and you won’t do any wrong adding in this nutritious green to the strawberry mixture described above. Oh yeah, throw some almonds in there for a kick of protein.
Want to know an interesting tidbit about spinach? If you want to extract ALL of the vegetable’s calcium, then cook it. Heat reduces its oxalate content, which opens up its calcium reserves for the taking. Eat it raw if you are more interested in ingesting iron, however, as heat has the opposite effect on the prevalence of that essential nutrient.
Diversify your diet this month and put these leafy greens on the dinner menu!
